Breakfast Bars

🍌 If you’ve been feeling a bit stuck in a loop with breakfast recently (and let’s face it, we all get like that!), these easy baked chewy bars do the trick especially if eaten alongside a smoothie to start the day!

A super easy recipe to whip up with kids, they also work well for a quick after school snack to tide over kiddos til tea. Filled with long lasting proteins, fats and natural sugars they’re a quick energy fix that should help offer some sustaining power for a while.

You’ll need:
2 ripe bananas
1.75 cups of porridge oats
0.25 cups of ground almonds (or more oats)
0.5 cup peanut butter (or other nut butter)
4 dates
1 tsp cinnamon
Optional extras : dried fruit (we used sultanas), chopped nuts, coconut, grated carrot/apple.

Mash the bananas, add the dates chopped up/pulled apart and mash into the mix.
Stir in peanut butter, then add ground almonds and cinnamon and mix.
Finally add the oats and any optional extras.
Push into a square baking tin around 20cm width and bake for 25mins at 180.
Chop into whatever size you like and cool!
Store in an airtight container for up to 3 days or freeze and eat within 3 months..
