Choco Power Pots 💥

Have you tried overnight oats yet? It’s been one of those Instagram-friendly recipes that have featured for years, a variation on porridge that’s eaten cold and all the prepping takes place the night before meaning you can still manage a power-packed brekkie when short on time! Not every version works though and we prefer to keep it simple rather than go overboard on flavours…

The measurements are a bit approximate so add things as you like to make it work for you. All naturally sweetened and filled with nothing but the good stuff this was gobbled down by my kiddo in about 2mins flat!

Ingredients (makes 3 pots, add more for more!)

  • 1 large eating apple/2 small – royal gala works
  • 1 tbsp cacao powder
  • 0.5 tsp/pinch of sea salt
  • 2 tbsp date syrup
  • Enough milk (dairy or alt milk as you like) to mix with the dry so it has a consistency like runny porridge) – around 3 cups (2:1 ratio against the dry)
  • Approx 1.5 cups of rolled oats
  • 2 tbsp ground flax
  • 1 tbsp chia seeds
  • Fruit to top with: blueberries, raspberries, banana slices etc
  • Optional: add 1-2 tbsp of nut butter to the liquid stage above for a nutty & creamy boost

Method

  1. Grate the apple
  2. Mix the milk, salt and cacao together first in a small bowl or cup and then pour into the apple
  3. Mix in the date syrup & nut butter (if using)
  4. Add the dry elements and mix together well
  5. Spoon into jam jars, small pots or ramekins and cover before popping in the fridge overnight
  6. Once out of the fridge, stir up again to mix all the layers and textures together properly
  7. Top with fresh fruit before serving
