🌱Springtime Pesto is proving to be a hit this week in our house – such a brilliant way to bury veggies in a familiar format..
🥦💜 In Winter we did Kale and now it’s in season we’ve gone for Purple Sprouting Broccoli.
🥦 Simply steam or boil some chopped florets of PSB then blitz up with:
1 cup cashews
1 clove of garlic
Handful of basil leaves
Squeeze of lemon
0.5 cup grated hard cheese
Pinch of salt
Once whizzing around, add the olive oil in a steady stream through the open top until it becomes as creamy and smooth as you like!
🌱 We’ve made it into quick pasta sauces with roasted veggies and cream cheese, dolloped onto spring soup and spread into loaded pittas but you could spread over pizza, mix into avocado mayo or loads more..
