Summer rice pud 🍚


🍚 Summery breakfasts to start your day off right – creamy vanilla rice & quinoa pudding topped with fresh strawberry chia compote.
💡 Eat warm or cold, make with coconut milk if you fancy, add in some cardamom for the luxury of it and make the strawberry compote with whatever berry you want to – it’s all versatile!

✨ Basic recipe for 3 decent portions or 4 smaller

Ingredients

  • 75g rice
  • 20g quinoa (toast for 5mins in the oven for extra nutty flavour)
  • 400ml milk – either whole cow or coconut works
  • 1 tsp vanilla
  • 2 tbsp maple syrup or honey (to taste)
  • Optional : cook with 3 cardamom pods then remove to eat

Method

👉 Slowly heat together in a pan and stir occasionally. It should take 30-35mins to cook and thicken up..add more milk if you like it runny (especially good with the coconut milk).

Berry Compote

  • 200g strawberries
  • 1.5 tbsp syrup/honey
  • 1 tbsp chia seeds

👉 Roughly chop the berries and simmer in a pan for 10-15 mins with the sweetener til soft. Add chia and cook further few mins. Mash up and take off the heat, cool then pop in fridge.
